This frozen mango slice is a refreshing summer treat for a hot afternoon that can be enjoyed by everyone as a dessert or snack. It’s gluten-free, dairy-free and refined sugar-free. A healthier substitute for the typical ice-cream or icy poles which are filled with processed sugar that many people crave in the hotter months. This recipe contains coconut cream for a creamy dairy-free substitute to dairy cream or yoghurt.
Ingredients:
2 large mangos, peeled and diced
2 bananas, peeled and chopped
¾ of a 400ml can of coconut cream
Method:
- Put all the ingredients into a food processor or blender. Pulse until combined and smooth.
- Pour into a square baking tin lined with baking paper. Smooth the top. Freeze for 2-3 hours until firm.
- When firm, cut into slices.
