These cookies have only 3 ingredients! They are so quick and easy to make using common ingredients found in everyone’s pantry. They are gluten-free, dairy-free and sugar-free. I used a smooth peanut butter that did not contain any added salt, sugar or vegetable oils. These cookies are a little soft and chewy. They are a great snack alternative to regular cookies that are full of processed sugar, salt and flour. Excellent for kids and lunchboxes. Watch the video below.
Xylitol is a sugar-free, low-calorie alternative (found in health stores and online) but honey, coconut sugar or your choice of sweetener can be substituted.
Servings: Makes 18-20 cookies.
Ingredients:
1 cup peanut butter
1 free-range egg
½ cup xylitol or 1/3 cup honey
Method:
1. Preheat oven to 180C. Line a baking tray with baking paper.
2. Mix all ingredients in a bowl by hand or with an electric beater until well combined.
3. Roll a tablespoon of batter for each cookie into a ball and place on the tray.
4. Gently press with a fork to flatten cookies
5. Bake for 10 minutes or until cookies lightly brown around the edges.
6. Let cookies cool for at least 5 minutes. They will harden as they cool.
