Healthy Macaroons

This is a healthy version of macaroons with simple ingredients and very easy to make. It calls for xylitol or honey instead of processed sugar. In the video I used xylitol which is a healthy sugar-free alternative with low calories and is antibacterial so it’s actually good for your teeth. What other sweeteners are actually good for your teeth? Xylitol can be found at health stores or online.

1 egg white, at room temperature
3 Tbs xylitol or honey
½ tsp vanilla essence
1 ¼ cups of shredded coconut

1.Preheat the oven to 180C (160C fan-forced).
2. Whisk egg white and vanilla essence until soft peaks form.
3. Add xylitol or honey and whisk to incorporate.
4. Add coconut and gently fold in using a wooden spoon.
5. Spoon about one tablespoon of mixture about 2.5cm apart onto a baking tray lined with baking paper.
6. Bake for 12 minutes or until macaroons begin to turn golden around the edges.
7. Let macaroons cool before serving.
