Grilled Chicken

This delicious grilled chicken recipe is a favourite in our household and we cook it nearly every week. That’s because it is quick, easy and really tasty! It’s gluten-free as long as you use a gluten-free curry powder. We use a curry powder that is purely spices. It’s also dairy-free and paleo-friendly if served with veggies. Once you have all the ingredients, you can make this regularly for easy weeknight dinners and take leftovers to work for quick lunches. If you want to make more servings, double the recipe but go easy on the sea salt and paprika. This is a must-try and I bet you’ll love it as much as we do!

Serves: 3

Ingredients:

  • 3 chicken thigh cutlets
  • 2 teaspoons of paprika
  • 2 teaspoons of curry powder
  • 1 teaspoon of coriander powder
  • 1 teaspoon of sea salt
  • 1 teaspoon of organic garlic paste
  • 1/2 teaspoon of organic ginger paste
  • 1 tablespoon of organic olive oil

Method:

  1. Mix all the ingredients together in a glass bowl. Leave to marinate for 10-15 minutes.
  2. Place chicken in a baking dish and bake in a preheated oven at 180C fan forced for at least 40 minutes or until cooked through. 
  3. Serve with vegetables.
